Easter was always a holiday that I looked forward to as a child. Of course there was the shopping trips with my mom to find the perfect Easter dress to wear to church (this same ritual has carried over into my adult life, of course!), the family dinners that included an Easter egg hunt in my Grandmothers backyard, and the delicious sweets that seemed to pour out of my Easter basket well into the next week. As an adult I still find beauty in celebrating this holiday in every way. As a Christian, I have a religious tie to the holiday that I choose to celebrate, but I also enjoy the other elements of the day such as the beautiful pastel colors everywhere, the family coming together, and of course, the sweets! My sweet tooth was actually the inspiration for this post. I wanted to make something that was not only festive, but also delicious too! When I found these Peep pudding cups on Pinterest, I had to make them. There are a few tweaks that I recommend (but I’ll cover that, below) that will make these turn out perfectly, just in time for your Easter dinner.
What you’ll need:
- Plastic beverage cups
- Bunny Peeps
- Speckled Jelly Bean eggs
- Shredded coconut
- Green food coloring
- Oreos
- Instant chocolate pudding
- Instant pistachio pudding
Step 1 : Mix up chocolate and pistachio pudding in separate bowls and refrigerate as recommended on box. I used vanilla pudding when I made this but I do not recommend. Vanilla pudding has a yellow tint and when mixed with the green food coloring, it turns a hideous brown color. Next time I will use pistachio pudding!
Step 2 : Crush up Oreos in a Ziploc bag and set aside. I used 5-6 Oreos but, if you make more pudding cups, use more Oreos. It’s really your call, I won’t judge!
Step 3: Once the pudding has thickened, add crushed up Oreos to chocolate pudding mixture.
Step 4: Fill 1/2 of the plastic cup with the chocolate pudding/Oreo mixture. Add the pistachio pudding on top of the chocolate pudding being careful not to mix them together.
Step 5: In separate dish, take a handful of shredded coconut (again, your judgement call based on how many peep cups you are making) and add 3-4 drops of food coloring. Mix the food coloring with coconut shreds until the coconut has turned a beautiful shade of green. (I wanted my ‘grass’ bright green!)
Step 6: Sprinkle your newly, dyed coconut shreds on top of the pistachio pudding.
Step 7: Plop your little pink bunny down in the middle of the grass coconut, and scatter the Jelly Bean eggs throughout.
There you have it, a fun festive Easter treat that the kids (and probably the adults too) will love!
