As the warmer weather swiftly approaches, I find myself craving more fresh fruits and vegetables on a daily basis. On any given day, I find myself reaching for berries to be most specific. Berries have always been my go-to fruit of choice. The sweet, juiciness that ensues after eat bite reminds me why I love them so much. Not to mention, they pack some serious health benefits (I’ll cover more on that in a later post). In prep of my upcoming nuptials this fall, I have turned to healthier options for my meals. Since I’ve always been an avid salad eater (my parents were lucky!), I am excited to get creative with all of the different possibilities that are out there when it comes to creating delicious, healthy salads. My motto is, the more colorful, the more healthy! I hope this simple change I am making can really turn into a new, healthier lifestyle, post-wedding bliss! What you’ll need:
- 1/4 cup blueberries
- 1 1/2 cups of artisan lettuce (or arugula)
- 1/4 of crumbled goat cheese
- 1- handful of walnuts
For the dressing
- 3 tablespoons olive oil
- 1/2 of a lemon squeezed
- 1 tablespoon honey
- dash of salt and pepper to taste
- 1 teaspoon Oregano
