There is something so calming about a Sunday morning, and since we’ve all been forced to stay home these last couple weeks, it’s made for even more peaceful moments. This past Sunday, I woke up, the sun was beaming through my window and there was a breeze filtering through my house; it was pretty much the best way to wake up in my opinion.
See, it’s been kind of dreary here in Ohio the last few days but being stuck inside and having crappy weather to go along with it, is not the best combo.
So, waking up to beautiful sunshine, meant one thing and one thing only…I needed to make a breakfast to match my mood. Enter, Brioche french toast.
I started making brioche french toast years ago when my husband got me hooked on it. The best way to describe brioche bread is that its richer in taste. Regular breads are usually made with just water, flour, salt and yeast but brioche has egg, milk and butter as well. I guess you could say, it’s a bougie bread of sorts.
Okay, let’s get to the recipe.
First thing you want to do is get a good loaf of brioche. Aldi came in for the win with the loaf I have now. It’s part of their Specialty line. **A little tip with special breads (brioche, sourdough, ect..), keep them in the refrigerator for maximum freshness. I’m not a big bread eater so it would likely mold before I could finish the loaf, and that’s not okay.**
Next, I whip two eggs in a soup bowl. I use this bowl because the it’s wide enough to lay a slice of bread inside of it, coating it perfectly. Then you’ll want to add about two tablespoons of heavy whipping cream, two teaspoons of vanilla extract and a liberal amount of cinnamon (the more, the better IMO).
Get your skillet nice and warm, spray with some non-stick spray and cook to your preference. I prefer my french toast golden brown with a nice crust on it. Finish with your favorite berries, warm syrup and a dash of confectioners sugar (which I did not have this time.)
Since I was feeling fancy, I even pulled out my gold flatware…see, you gotta keep it bougie! ( I got my set from Target but I’ve linked similar below)
Now all that’s missing is a mimosa (hold the juice though) and a good Netflix binge (can you say quarantine and chill!)

- 4 slices of Brioche bread
- 2 eggs
- 2 teaspoons vanilla extract
- 2 tablespoons heavy cream
- 1 teaspoon cinnamon
- 1/2 cup fresh berries
- 2 tablespoons syrup
- Heat skillet to medium heat
- In a shallow bowl, mix eggs, heavy cream and cinnamon
- Whisk under eggs, cream and cinnamon are evenly mixed
- Coat both sides of brioche bread in egg wash, careful not to let too much absorb as you don’t want the bread to become soggy
- Once coated, place bread in skillet and cook on each side for 3 – 4 minutes
- Finish with fresh berries, warm syrup and sprinkle with Confectioner’s sugar (optional)
