There’s just something about fall that makes me crave soup with crusty bread at least three times a week! The juxtaposition of a hot, creamy soup alongside a breezy, cool autumn evening is simply unbeatable for dinner. Too bad I married a guy who asks, “What meat are we having with it?” at least two out of those three times. So, soup as the main course only happens a few times a month around our house—ah, the reality of marriage compromises, right?
Just because I married a man who doesn’t love soup as much as I do, didn’t stop me from creating this simple, creamy roasted tomato soup recipe. And guess what, he ended up adding a little bacon to that grilled cheese so all was good in the Ruskin household after all! But seriously, Drew did end up loving this soup so much so that we’ve made it a few times since and I plan on grabbing ingredients this week to make it again. Let me tell you, finding an easy, healthy and delicious recipe when you’re a busy adult is worth its weight in gold.
Here’s what you’ll need to create this creamy roasted tomato soup recipe.
- 2 – 12oz packages of Wild Wonders tomato medley
- 1 – Roma tomato
- 1/2 – sweet onion
- 2 – sprigs of rosemary
- 1 – Alouette package of spreadable cheese (garlic & herb) – the secret ingredient is this right here.
- 4-5 mini red and yellow peppers
- Drizzle of olive oil
Let’s get to cooking, shall we?!
- Cut your Roma tomato and sweet onion into medium-sized chunks
- Preheat oven to 350° on the roast setting
- In a medium-sized baking dish, add Roma tomato, sweet onion, mini tomato medley, and 4-5 mini peppers together
- Place the entire package of Alouette cheese to middle of dish with the tomato, onion and peppers surrounding it
- Drizzle the entire dish with olive oil
- Top with a few Rosemary sprigs and sprinkle with salt and pepper
- Place dish in oven and roast on 350° for 15-20 minutes
- Check to see if peppers are browning, add more time if needed
- Once done, remove stems from Rosemary and add all roasted veggies to a food processor or blender and blend until smooth and creamy
- Pour into your favorite soup bowl and drizzle with a touch of heavy cream
I find that grilled cheese on sourdough is the best accompaniment to this creamy roasted tomato soup but you can certainly get creative {certainly my husband did!} What other soup recipes do you plan on trying this season? I need some more ideas so send them my way.
