Raise your hand if you have a love-hate relationship with cooking. Yes, same here. You see, I love making delicious homemade meals at home, sipping on some wine, listening to music (i’ve been on this jazz music vibe lately – Bossa Nova to be exact thanks to my girl, Lauryn Evarts of The Skinny Confidential for the rec) and just generally enjoying the flow of the evening. Usually Drew is in the kitchen with me (that man LOVES to cook) and we have a nice chef/sous-chef thing going on. It’s really a nice way to end the day together.
We sit down for dinner, have a nice convo and then the clean-up dread sets in. Ugh. Here is where the “hate” part of cooking comes into play, and the reason why dining out is just so damn appealing to me.

Let alone stare at dirty dishes while sipping my coffee. So you can imagine how excited I get when I find recipes that are simple AF (and by simple I mean, they require very little pots and pans.)
Best part about this meal is not only does it make clean up a breeze, but prep time is minimal. So if you’re wanting to secure a few go-to meals just in time for summer, I highly recommend adding this One-Pan Shrimp Boil to the rotation.
Let’s get to it, shall we?
Down south, this meal is usually whipped up in a huge stock pot and simmered for hours (i mean, my mouth is basically watering just thinking about it.) But ain’t nobody got time for that, at least not on a busy weeknight! Am I right? This is where the whole “one-pan” thing comes into play.
You grab your raw, deveined, still-in-the-shell shrimp (i get the raw frozen kind and then thaw them slightly), kielbasa sausage, small golden potatoes, corn on the cob, butter, Old Bay Seasoning and a pinch of garlic powder. Start a pot of water, bring to a boil and par-boil your potatoes (basically another word for semi-boil them).
You know why? Because hard potatoes in this dish would just be devastating, let’s be real.
Next, you want to melt your butter, and mix in your seasonings (don’t worry i’ll give the exact measurements below in the recipe.) Put all your ingredients in a bowl (okay I lied, you do have to use another dish, but its okay, I’m putting Drew on cleaning duty since i “slaved over the hot stove making this one” hehe!) and pour seasoning mixture over everything and give it a good mix.
Finally, pour it all onto a sheet pan, pop into the oven at 400 degrees for 12-15 minutes.
I should add, before I pop in the oven, I squeeze a lemon wedge over the food. It adds that extra pizzazz IMO.
And voila! Dinner is served. Now don’t forget, you’re not on kitchen clean up tonight!

- 1 pound of baby yellow potatoes
- 3 ears of corn cut crosswise into 6 pieces
- 1 pound of medium shrimp, deveined
- 1/4 cup of butter
- 4 cloves of garlic
- 1 tablespoon of Old Bay Seasoning
- 1 package of Kielbasa sausage, thin sliced
- 1 lemon cut into wedges
- Preheat oven to 400 degrees
- In a large pot of boiling water, par-boil potatoes for 10-12 minutes, stir in the corn the last 5 minutes
- In small bowl, melt butter, mix in garlic and Old Bay Seasoning
- Place corn, sausage, potatoes and shrimp in large mixing bowl and pour butter mixture over ingredients
- Place on sheet pan and bake for 12-15 minutes, or until the shrimp are opaque and corn is tender
- Squeeze a lemon wedge over the dish before serving
- Pairs well with a chilled glass of Sauvignon Blanc
