There is something so refreshing about a crisp salad on a hot summer day. On those especially hot days, like this past weekend, I tend to crave them! This weekend Drew and I decided that we were going to make gourmet burgers and enjoy some patio dining at home. I wanted to make a unique side dish that would go great with our gourmet burger combinations that we were whipping up (Can you say crispy jalapenos and onion petals on a burger? Delish!) Of course, my mind went directly to something sweet…enter, watermelon salad! I found this watermelon salad recipe via Pinterest. Surprisingly it didn’t require many ingredients and it took about 10 minutes to whip up, my kind of side dish! I highly recommend this salad to anyone who has a particular love for watermelon or anyone looking to put a spin on the typical summer salad dish!
Balsamic & Watermelon Salad:
- 1/4 cup balsamic vinegar
- 6 cups diced seedless watermelon
- 4 ounces crumbled goat cheese
- 1/4 cup mint leaves
- 2 tablespoons olive oil
Cut and chill watermelon for about an hour, if not already chilled. While the watermelon is chilling, add balsamic vinegar to a saucepan over medium heat and bring to a boil. You want the balsamic vinegar to reduce down to a glaze so I recommend keeping it on the stove for at least 5 minutes. Once thickened, let stand for a few additional minutes. Add the chilled watermelon, chopped mint leaves, olive oil and goat cheese into a mixing bowl and toss gently. Drizzle the balsamic reduction over salad, garnish with a sprig of mint and serve immediately.
