I live for a good appetizer. The saltier the better if i’m being honest {ok, not too salty – but you get my point.} And usually if you can dip a chip in it, that’s even better.
Enter Spinach Artichoke Dip. Who doesn’t like a good spin dip? It’s usually our go-to appetizer when we go out to dinner, but lately we’ve been underwhelmed when we order it. Honestly, that’s what inspired me to make my own.
Side note real quick, nothing sucks worse than having high expectations for something and then when you order it and it comes to the table, you’re like “boo, i should’ve ordered something different.” Food buyer’s remorse, is what I’m calling this.
So back to the point. I searched Pinterest for “Easy Spinach Artichoke Recipe” because of course, the easier the better. I love a challenging recipe just like the next person, but lately, I’ve been so busy that easy is just more appealing to me. And let me tell you, it was easy.
Here’s what you’ll need:
- Artichoke hearts
- Fresh spinach
- Mayonnaise
- Garlic
- Cream cheese
- Shaved Parmesan cheese
- Sour cream
- Your favorite tortilla chips or pita bread
Once you have all your ingredients for your spinach artichoke dip, you’ll want to start prepping {chop up your fresh spinach + garlic,} grab a big mixing bowl and a casserole dish of some kind {to bake it.} While you’re doing this, don’t forget to warm your oven to 375. I’m all about efficiency when I’m cooking. Less time in the kitchen means more time I can spend shopping on Amazon.
Your house will smell delish when it’s done.
so much so, that you can likely convince your husband that this is what’s for dinner and call it a night. {Ha, a girl can dream.} But seriously, I could live off appetizers for dinner. Drew? Not so much!
This appetizer can be whipped together in about 45 minutes and makes the perfect food to take to game night or a tailgate party {since those are right around the corner, Go Purdue!}
Or if you’re like me, you’ll just make it for yourself on a random Tuesday when your husband works late and you feel like catching up on your reality TV and cracking open a bottle of white wine, once the baby goes to bed of course!

Spinach Artichoke Dip
Ingredients
- 2 C. Shaved or grated parmesan cheese
- 3 C. Chopped, fresh or frozen spinach
- 12 Oz. Artichoke hearts, drained and chopped
- 2/3 C. Sour cream
- 1 C. Cream cheese
- 1/3 C. Mayonnaise
- 2 Tsp. Garlic, mined
Instructions
- Preheat oven to 375
- Mix together Parmesan cheese, chopped spinach and artichoke hearts in a mixing bowl
- Mix together cream cheese, mayonnaise and sour cream with the artichoke mixture
- Pour mixture into baking dish
- Bake for 20-30 minutes
- Serve with tortilla chips or pita bread and enjoy!
